Yukon Gold Garlic Mashed Potatoes

Ingredients needed:

3 lbs fresh Yukon Gold potatoes
1 pint heavy cream
1/8 lb butter or half of a ¼ stick of butter
2 heaping tablespoons of fresh minced garlic
1 tablespoon of salt
1 tablespoon of black pepper
5 quarts of potable water

Equipment needed:

1 10-quart stock pot
1 medium size pasta strainer (large enough to hold cooked potatoes)
1 stirring spoon
Heat source (gas stove, fire pit with grate)


Put water into stock pot, cut potatoes in half and add to water. Bring to boil and cook until potatoes are tender all the way through. Remove from heat source and strain the water out through the strainer. Add butter and garlic to empty stock pot. Sauté garlic until tender but not browned. Remove stock pot from heat source. Add strained potatoes, salt and pepper, and then heavy cream. Stir until completely mixed. Season more if needed then serve. Serves 8-10 people.
